椒鹽沙鯭

材料:<br />
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;沙鯭魚約斤餘,蒜茸2茶匙。蔥粒、紅椒圈各少許。<br />
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;花椒鹽1&nbsp;&nbsp;1/4茶匙。生粉少許(炸魚時用)。<br />
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;酒少許(灒酒時用)。<br />
醃料:<br />
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;紹酒1湯匙。胡椒粉少許。<br />
做法:<br />
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;1.沙鯭魚去皮洗淨,去骨起肉,切件,用醃料略醃。<br />
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;2.將醃透魚件瀝乾汁液,撲上生粉,隨即放入熱油中炸脆,<br />
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;撈起,隔油。<br />
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;3.燒油1湯匙爆蒜茸,將魚件回鑊,灒酒,撤上蔥粒、紅椒圈<br />
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;及花椒鹽,快手兜炒,完成。
