皮蛋洋蔥炒蛋

雞蛋 4個<br />
洋蔥 1個<br />
鹽 半茶匙<br />
豉油、麻油 各適量,<br />
胡椒粉 少許。<br />

1). 皮蛋去殼切細片<br />

2). 雞蛋加入鹽和少許胡椒粉打勻;把洋蔥去皮、洗淨,切成幼絲待用。<br />

3). 鍋放少量油燒熱,下洋蔥絲炒片刻,鏟出;晾涼後和皮蛋一起倒入雞蛋液中,拌勻。<br />

4). 把混合液用2湯匙油快炒上碟,倒入適量醬油、麻油即可。炒蛋時,注意油要熱
