瓠瓜乾 ... 1長條(切成8小條) <br>
鹹雪裡紅 ... 8大片 <br>

枸杞 ... 1小匙<br>
蔥 ... 2根<br>
薑 ... 1小片<br>

作法步驟:<br>
<br>
1.河鰻去頭、尾,洗淨,切成8小段,去骨取肉;分別用雪裡紅裹好,再用瓠瓜乾綁緊。<br>
<br>
2.將上述材料置盤中,均勻加入A料及B料,上籠蒸約1小時取出,撿去蔥、薑,點綴盤飾材料即可。<br>

備註:<br>
<br>
1.蔥、薑只是用來去腥,所以出菜時宜撿掉。<br>
<br>
2.河鰻的脂肪含量較一般魚類高,應小心個人飲食宜忌。<br>
