<TD>1.鴨頭清洗後放入滾水中汆燙1分鐘,撈出放入冷水中沖?。<BR></TD></TR>

<TD>2.接著將作法1的鴨頭上細毛拔除,再以清水洗淨。<BR></TD></TR>

<TD>3.將作法2的鴨頭放入東山鴨頭滷汁中,煮滾後轉微火持續煮約1小時。<BR></TD></TR>

<TD>4.將作法3關火繼續浸泡約40分鐘後撈出鴨頭,吹涼、晾乾。<BR></TD></TR>
<TR>
<TD>5.另熱一油鍋,油溫熱至約160℃,將作法4的鴨頭放入鍋中,以中火炸至表面焦香即可。</TD></TR></TBODY></TABLE></DIV>
