1 洗淨宰殺好的福壽魚,加入醃料抹勻,醃制20分鐘。</font></font></font><br />

5 燒熱1碗油,放入福壽魚,以中火炸至雙面金黃色,撈起瀝乾油備用。<br />

6 鍋中留少許油,爆香蔥段、蒜末和洋蔥片,澆入糖醋汁炒勻煮沸,輕輕放入福壽魚,加蓋以小火燉煮5分鐘。<br />

7 將福壽魚盛入盤中,往鍋内倒入青甜椒、紅甜椒和黃甜椒,與湯汁一同炒勻。<br />

8 淋入1/3杯生粉水勾芡,将芡汁澆在魚身上,即可上桌。<br />

<font face="Simsun "><font size="4"><font color="#0000ff">1、福壽魚,又叫羅非魚、非洲鲫,選購時以一斤左右爲最佳,過大過重的福壽魚肉質粗糙,土腥味也較重。<br />

<font face="Simsun "><font size="4"><font color="#0000ff">2、煎魚的油要燒熱,應先將一面煎至微黃再翻面,過於心急給魚翻身,魚皮很容易粘鍋脫落。<br />

<font face="Simsun "><font size="4"><font color="#0000ff">3、煎好的魚要回鍋燜煮一下,要不時將湯汁淋在魚身上,使其更容易入味。<br />

<font face="Simsun "><font size="4"><font color="#0000ff">4、應先将煮好的魚盛起,再給湯汁勾芡,直接淋生粉水,既不容易翻攪成芡汁,又會將魚身弄碎。<br />

<font face="Simsun "><font size="4"><font color="#0000ff">5、調糖醋汁時,應邊試味邊下調料,調至其酸甜適口便可收手。<br />
