豆腐蟹肉扒豆苗

嫩豆腐 二個<br />
假蟹肉 三小條<br />

<strong>勾芍調味料</strong><br />
<br />
大白粉 二湯匙<br />
鹽巴 半茶匙<br />
蠔油 一湯匙<br />
胡椒粉 少許<br />
醬油 一茶匙<br />
清水 一碗<br />
<br />
<br />
<strong>作法</strong><br />
<br />
(1) 先將豆腐切丁, 豆苗洗好, 假蟹肉切斜片<br />

(2) 開水至滾後, 加半茶匙鹽, 放入切丁豆腐, 煮一分鐘既可, 輕輕把豆腐出來淨水待用<br />
<br />
<font color="red">此舉為清除豆漬味, 而煮時豆腐不易碎.</font><br />

(3) 開鑊待紅後, 加入一湯匙油, 跟著將豆苗放入,<br />

(4) 翻抄二分鐘, 豆苗已經是收縮非常, 煮至七分熟<br />

(5) 將青菜苗放上伴碟四周, 增加美感食慾, 但留下中央空間<br />

(6) 將調味料勾入, 待勾成後加入豆腐再煮幾分鐘<br />

(7) 將煮好的豆腐倒入碟的中央地帶<br />

(8) 最後加上假蟹肉, 【豆腐蟹肉扒豆苗】就完成了<br />
