燈碗肉

用料:<br />
  羊腱子肉四兩,大蒜三瓣,香蔥兩棵,醬油兩大匙,醋兩大匙,姜一小小塊,香油一小匙,清湯一湯勺,料酒一匙,鹽适量。<br />

做法:<br />
1、将肉橫向切成薄片;姜蒜剁末;蔥切碎;澱粉裏适量水調成水澱粉。<br />

2、鍋中放油燒至六成熱,下肉片炸呈燈碗狀。<br />

3、撈出控淨油。<br />

4、鍋中留微量油,下蔥姜末煸炒出香味。<br />

5、烹入醋、醬油,清湯50毫升、鹽、料酒,沸後下炸好的肉片。<br />

6、稍燒後勾芡。<br />

7、放香油、蒜末,翻勻。<br />
