[原創] 炸蘭花大蝦

所需材料: <br />
<br />
草蝦 ... 12隻 <br />
在來粉 ... 2~4大匙(或太白粉2大匙) <br />
雞蛋 ... 1個 <br />
黑芝麻 ... 1大匙 <br />
桂末椒鹽 ... 1/2大匙 <br />
炸油 ... 1份 <br />
鹽 ... 1/4茶匙 <br />
薑酒汁 ... 1大匙 <br />
太白粉 ... 1茶匙 <br />

作法步驟:<br />
<br />
1.蝦洗淨剪去刺骨切下蝦頭,剝去蝦身的殼,用刀片切成直大片,每隻蝦片切成三片,蝦尾與殼連住不切開,蝦肉用醃料抓拌20分鐘。<br />
<br />
2.雞蛋去殼打散,加進在來粉2大匙,充分拌勻成蛋粉(稀)。<br />
<br />
3.炸油加到十分熱,把醃好的蝦先沾雞蛋糊並以手把蝦身三片分開,在最頂處沾上少許黑芝麻入油以中火炸透,約炸2~3分鐘,一次不可投下太多蝦,每隻要充分被油泡住。<br />
<br />
4.炸好的蝦撈起去油,盛盤食時沾淑鹽吃。<br />
<br />
5.蝦頭抹乾水分亦可用油炸熟作盤花。<br />
