正宗泰國椰子湯

材料<br />
<strong>中蝦455克,去皮,去沙腸,罐裝椰奶2罐(400毫升裝),水475毫升,南姜1塊(2.5釐米厚),切成薄片,檸檬草4棵,拍爛,切碎塊,青檸檬葉子10片,撕成兩半,新鮮香菇455克,切片,青檸檬汁60毫升,魚露45毫升,黃糖55克,咖喱粉2克,青蔥6克,切蔥花,干紅椒粗粉3克</strong><br />

做法<br />
<strong>1.取一個大鍋,加水燒開。下蝦煮,直到煮熟,大約一分鐘。撈出蝦,瀝乾水,擱一旁。<br />
2.將椰奶和475毫升水倒入一個大平底鍋煮到剛要沸騰。加入南姜、檸檬草和檸檬葉子,小火煮10分鐘,或直至香料的味已融入湯裡。將湯用大漏勺過濾到另一個鍋裡,棄掉香料。加香菇在湯鍋裡小火煮5分鐘。加青檸檬汁、魚露、黃糖,攪拌均勻。撒入咖喱粉調味。<br />
3.將煮熟的蝦放進熱湯裡,再用勺舀到碗裡。撒上蔥花和紅椒粗粉即可享用。</strong><br />
