新加坡煮紅蟹

<strong>原 料:紅蟹1只(重約500克)、蒜蓉、姜蓉、紅尖椒粒各25克、雞蛋2個、香菜葉1克。<br />
茄汁30克、豆瓣醬15克、白砂糖15克、白醋5克、色拉油20克、生粉5克、蔥花8克。</strong><br />
<br />
操 作:<br />
<strong>1、紅蟹洗淨,切去蟹腿,將蟹殼剝離,蟹身份成均勻的8-10份;<br />
2、雞蛋磕入碗中打勻備用;<br />
3、鍋內放入色拉油,燒至七成熱時放入蒜蓉、姜蓉、紅尖椒粒中火煸炒出香;<br />
4、加入250克清水小火煮開,下紅蟹用蓋蓋好小火煮約10分鐘;<br />
5、下茄汁、豆瓣醬、白砂糖、白醋小火煮開煮後用生粉勾芡關火,趁熱淋入雞蛋液調勻,用蔥花、香菜葉點綴即成;<br />
