【材 料】<br />

切邊土司4片<br />
<br />
紅豆沙100公克<br />
<br />
生鹹蛋黃4顆<br />
<br />
雞蛋3顆<br />
<br />
<br />
【做 法】<br />

1.鹹蛋黃放入蒸籠蒸約4分鐘至熟,取出放涼備用;雞蛋打勻成蛋液備用<br />

2.用桿麵棍依序桿壓去邊土司,讓土司變紮實,於土司片的1/3處舖上約25公克的紅豆沙,再取一顆作法1的鹹蛋黃捏成跟土司等長的條狀,放至紅豆沙上,將土司捲起成圓筒狀,封口處沾上少許作法1蛋液黏緊。<br />

3.將作法2完成的土司卷放入作法1蛋液中沾勻蛋液。<br />
<br />
4.熱油鍋,將油溫燒熱至約120℃,放入作法3的土司卷油炸至表面呈金黃色,撈出瀝乾油脂即可。<br />
