  <strong>材料<br />
  鮮仔鰱魚750克,大蒜100克,泡辣椒15克,姜米5克,蔥花15克,醬油15毫升,料酒40毫升,醋10毫升,味精1克,精鹽3克,白糖15克,水豆粉5毫升,鮮湯(或者水)250毫升,混合油1000毫升</strong><br />

  做法<br />
  <strong>1.選用仔鰱魚,大只的需要從中間段切成2-3塊,小只的不需要切斷,除去內臟,洗乾淨待用。<br />
  2.泡辣椒去蒂、去籽宰成細末,大蒜用油在鍋中爆炒後待用。<br />
  3.鍋置火上,下油燒至八成熱,放入仔鰱魚炸緊皮時撈出瀝油。<br />
  4.油鍋在火上燒至六成熱,下入大蒜、泡辣椒、姜炒勻,油成紅色加入鮮湯燒開後,將仔鰱魚放入鍋中,下白糖、醬油、料酒燒開。<br />
  5.再改用小火燒約5分鐘,下味精,等大蒜變軟時,輕輕撈起盛於盆中,再將鍋內燒魚的湯汁移至大火上,下醋、蔥花、水豆粉勾成滋汁淋在魚身上即可。</strong><br />
