小米鮮蝦疙瘩湯

【小米鮮蝦疙瘩湯】<br />
<br />
原料:<br />
<strong>小米約50克、麵粉4大勺、鮮蝦3-4只、西紅柿1個、肉餡約50克、香菜末或者香菜末適量、清雞湯或者清水1大碗<br />
調料:<br />
鹽適量、料酒1小勺、雞精適量、香油少許</strong><br />
<br />
做法:<br />
<strong>1.西紅柿洗淨切小丁,鮮蝦去殼去紗線洗淨備用,小米淘洗乾淨,放入開水中,煮成8分熟的小米飯。<br />
2.然後將小米飯撈出來,瀝乾水分。<br />
3.麵粉放入容器中,然後把煮好的小米飯倒入麵粉中。<br />
4.用筷子攪散,使每粒小米飯都均勻的裹上麵粉,滾成一個個小面球。<br />
5.炒鍋燒熱倒入2勺植物油,油溫5成熱後,倒入肉餡炒散,烹入料酒炒勻。<br />
6.倒入西紅柿丁炒至西紅柿變軟。<br />
7.倒入清雞湯煮滾。<br />
8.待湯沸騰後,倒入小米疙瘩,用筷子輕輕撥散,防止黏成一坨,用中火煮約1分鐘。<br />
9.再放入蝦仁,煮至蝦仁變色打卷,就可以關火了,起鍋前加入適量雞精和香油調味,再撒入香蔥末或者香蔥末增香即可。</strong><br />

提示:<br />
<strong>滾小米疙瘩的時候,小米飯不要一次性都放入麵粉中,以免小米疙瘩太濕粘在一起,要保證滾好的小米疙瘩是一粒粒的才好。</strong><br />
