雜炒布包豆腐

<strong>主料:布包豆腐230克,干黑木耳(提前用冷水泡發)、西芹各適量;<br />
配料:紅泡椒4個,生薑、大蒜、蔥各適量,素蚝油一小勺,蘑菇精二分之一小勺,生抽一小勺,鹽適量,水澱粉三大勺;</strong><br />
<br />
做法:<br />
<strong>1、將布包豆腐切成約0.3釐米厚的片,泡發的黑木耳去蒂洗淨撕成小朵,西芹洗淨斜切成片,紅泡椒斜切成段,生薑切絲,大蒜去皮切片,蔥切成約4釐米長的段;<br />
2、將素蚝油、蘑菇精、生抽、鹽、水澱粉放入小碗中拌勻成調味汁,待用;<br />
3、熱鍋內放入少許油,炒至出油;<br />
4、下入布包豆腐,用筷子將其一片片地鋪在鍋子裡,煎至兩面金黃;<br />
5、將煎好的豆腐推至鍋子的一邊,然後在鍋子的另一邊下入姜蒜與泡椒,將其炒出香味;<br />
6、下入黑木耳與西芹,炒勻,加入少許水(素高湯更好),翻炒均勻;<br />
7、下入蔥段,倒入調味汁,炒勻即可出鍋。</strong><br />
