臘味煲仔飯

<strong>食材:</strong>大米1.5杯、臘腸2根、臘肉150g、油菜50g、雞蛋1顆、六月鮮醬油適量、鹽適量、糖適量、雞粉適量、青蒜末適量、水適量、豬油1湯匙、蒸魚豉油適量<br />

<strong>做法:</strong><br />

1)大米洗凈,放入砂鍋中,加水,米與水的比例大致是1:1.5,水不要太多。<br />
<br />
2)將砂鍋至於火上,大火煮開後立即轉小火,蓋上蓋子燜煮。將米飯煮至8成熟。<br />
<br />
3)油菜洗凈一分為二。<br />
<br />
4)將臘腸和臘肉切成片狀,家裏正好有幾根很細的青蒜,就切了一點點。<br />
<br />
5)調制一個調味汁,將醬油、蒸魚豉油、雞粉、少許糖一起加入小碗中,再加入適量水調成汁備用。<br />
<br />
6)待米飯中的水分快要收盡時碼入臘腸和臘肉,並將一勺豬油延四周加入到砂鍋中(這樣可以形成脆脆的鍋巴)加蓋再以小火燜5分鐘左右。<br />
<br />
7)另起鍋用油鹽水汆燙熟油菜,撈出過涼水以保持鮮綠的顏色。<br />
<br />
8)打開砂鍋蓋子,均勻的淋入事先配好的調料汁後關火。<br />
<br />
9)快速碼放上油菜芯,並打入一個雞蛋,蓋好砂鍋蓋子,用砂鍋的余溫繼續燜10分鐘左右,即可食用了。<br />
