蕃茄菊花魚

<strong>材料<br />
草魚2斤、嫩豌豆50克、蕃茄醬1瓶、豆粉、吉士粉少許、薑蔥、料酒、鹽、白醋少許、白糖少許、味精少許</strong><br />

做法<br />
<strong>1、草魚買的時候處理乾淨,把魚兩邊的肉分開,拿回家再清洗乾淨後,把魚肉切成菊花形(就是魚皮朝下,魚肉朝上,先一刀一刀的斜切再正切就形成),用薑蔥料酒鹽碼味20分鐘,魚骨一起碼味,魚骨可以用來熬湯,一魚兩吃。<br />
2、嫩豌豆用開水煮斷生(煮的時候放點油,保持它的綠)撈出冷開水浸哈撈出待用。<br />
3、魚肉碼味後撈出用乾淨的紗布吸乾水份,用豆粉和吉士粉拍粉每個地方都要拍進粉。<br />
4、熱油鍋6成熱時(油要多)放入魚肉炸至金黃撈出擺盤,放上豌豆待用。<br />
5、鍋裡剩少許的油,倒入蕃茄醬炒至起泡時少加點水,再放入白糖,少許的白醋和味精,炒至白糖融化時用少許的薄芡勾入後淋在魚上即可。</strong><br />
