  <strong>用料<br />
  桂魚1.5 斤<br />
  潮汕鹹梅6 顆<br />
  香蔥2 根<br />
  香芹1 根<br />
  姜5g<br />
  綿白糖1 茶匙(5g)<br />
  油1 湯匙(15ml)<br />
  紅辣椒2 顆</strong><br />

  做法<br />
  <strong>1. 將魚去內臟洗淨,打上花刀;香蔥切小段;姜切成薑末;香芹切碎;紅辣椒切碎;鹹梅去了核在碗裡搗成泥備用。<br />
  2. 將搗碎的鹹梅均勻塗抹到魚身上,放上蔥段、薑末、辣椒末和一點白糖,放入蒸鍋中大火蒸7 分鐘,看到魚眼凸起即刻關火。將切碎的香芹末灑在魚身上。<br />
  3. 大火燒熱炒鍋中的油至八成熱,將油淋在魚身上烹香提味。</strong><br />

  小貼士<br />
  <strong>蒸魚要講究嫩,蒸老了就失去了魚的鮮美。一條一斤左右的魚蒸七分鐘,或者看到魚眼一吐白就可以了。</strong><br />
