薏米香芋南瓜煲

用料<br />
<strong>南瓜 200g<br />
薏米 20g<br />
椰漿 250ml<br />
蒜 2瓣<br />
姜 2片<br />
鹽 1茶匙<br />
糖 2茶匙<br />
油 1湯匙<br />
大芋頭 200g</strong><br />

做法<br />
<strong>1. 蒜切片。薏米加水浸泡4小時以上。芋頭、南瓜削皮後切大小適中的菱形塊。<br />
2. 鍋內放入油,燒至5成熱時放入薑片和蒜片爆香,然後倒入芋頭和南瓜塊,小火翻炒1分鐘左右,再加入薏米炒勻。<br />
3. 倒入半碗清水,加入椰漿、鹽、糖,煲滾後轉小火繼續煲煮20分鐘,至芋頭和南瓜軟爛。</strong><br />

<strong>芋頭最好選用荔浦芋或比較粉的,切開後可以見到淺紫色的絲,會比較粉糯。</strong><br />
