林口長庚醫院腎臟科系臨床毒物科主任顏宗海、台大醫院腎臟科主治醫師姜至剛、具美國奧瑞崗州立大學毒理學碩士學位的主婦聯盟環境保護基金會講師陳修玲與營養師程涵宇均都認為鐵鍋屬於安全穩定的鍋具,沒有見過不能煮綠豆或中藥的說法或研究,但鋁製食具則存在溶出鋁離子,沈積大腦、骨頭產生病變的風險,而中醫師李思儀、田宜民則以中醫學理認為怕影響中藥材藥效,建議以陶鍋烹煮中藥為佳;而對花色瓷器或是塗上生漆的竹筷則不用過度驚慌,只要檢驗合格並無安全上的疑慮。<br />

網路傳聞 鋁鍋抗腐蝕性能力差,遇弱鹼、弱酸、鹽等物質會發生化學反應,生成特殊的化合物,故菜餚、酒、味精等不應裝在鋁製容器中過夜。還有雞蛋也不宜在鋁鍋中攪拌,因為蛋清遇到鋁會變成灰白色,蛋黃則變成綠色。<br />
<br />
<strong>○ :</strong>專家認為要避免使用鋁製食具烹調,或是以鋁製食器裝酸性食物。<br />
<br />
<font color="Navy"><strong>◎</strong>顏宗海醫師:</font><br />
世界衛生組織在1997年提出攝取過量鋁恐罹患阿茲海默症的假設後,即使目前尚未有直接的科學定論指出鋁會導致阿茲海默症,但站在腎臟科醫師的角度,鋁離子主要經由腎臟代謝,多餘的離子會沈積在腦部與骨頭,造成腦神經或骨骼病變,而長時間使用鋁製食具易有溶出鋁離子的疑慮,尤其台灣屬洗腎王國,對腎臟功能較差如慢性腎衰竭、需血液透析的患者來說應盡量避免。但文中提到蛋會變色是錯誤說法,蛋可能受到鋁汙染但不至於變色。<br />
<br />
<font color="Navy"><strong>◎</strong>程涵宇營養師:</font><br />
據聯合國糧農組織和世界衛生組織共同建立的國際食品法典委員會(Codex Alimentarius Commission, CAC)建議成人每周、每公斤鋁攝取量為1毫克,依平均體重60公斤換算,每周容許攝取為60毫克。雖短時間加熱鋁製食品容器的溶出量並不會對人體造成危害,但曾有學者Scancar等人將德國泡菜及酸蕪菁置於鋁製鍋具加熱2小時,結果2種食物溶出的鋁含量分別為313及260毫克/每公斤,為60公斤成人每周鋁建議容許值的5.21倍與4.33倍,因此使用鋁製食具烹調不宜過久,且盡量勿以鋁製食器儲存酸性食物。<br />

網路傳聞 因綠豆中含有單寧,在高溫條件下遇鐵會生成黑色的單寧鐵,使綠豆湯汁變黑,有特殊氣味,不但影響食欲、味道,而且對人體有害。<br />

經翻查文獻,沒有醫學研究指出鐵鍋不能熬煮綠豆的相關根據,其實鐵鍋的結構穩定,疑慮主要在鐵鍋若缺乏保養易生鏽,長時間、高劑量的食用到鐵鏽才會造成腸胃道不適。<br />

<font color="Navy"><strong>◎</strong>姜至剛醫師:</font><br />
只有使用到保養不善而鏽蝕的鐵鍋,才需要擔心烹調時會吃下鐵鏽。<br />

並沒有聽過綠豆中單寧會在高溫與鐵結合成單寧鐵的說法,正常使用鐵鍋煮綠豆無妨。<br />

雖然一般不會用油漆塗筷子,但若真的塗上油漆的筷子則要注意,恐因塗料剝落、遇熱溶解等產生重金屬離子如鉛、鎘,或是有機溶劑苯,不小心吃下肚就易傷害腎臟功能。<br />

上色瓷器均含程度不等的鉛、鎘等重金屬,建議購買經食品藥物管理署明訂「食品器具容器包裝衛生標準」餐具,即使含微量重金屬,人體也可自然排出,因鉛為腎臟代謝,對於腎臟機能較差者且對瓷具來路有疑慮民眾,建議內層選擇不要五顏六色塗料,以白色為主。另外,氡雖屬放射性致癌物質,但與瓷器製作過程並無相關。<br />
