椒鹽阿拉斯加鱈魚柳

【用料】<strong>阿拉斯加黑鱈魚肉300g、雞蛋清25g、粳米粉10g、料酒20g、白胡椒粉1g、蔥10g、澱粉15g、花椒鹽(用花椒鹽、鹽炒成)10g</strong><br />
<br />
【做法】<br />
<strong>1.黑鱈魚肉解凍後切成魚柳,放入碗內,加料酒、白胡椒粉、蔥花、鹽拌至起粘性後,加入雞蛋清拌和,再加干澱粉拌勻。<br />
2.將雞蛋清打成泡沫狀,加入澱粉、粳米粉攪成發蛋糊。<br />
3.鍋置火上燒熱,舀入油燒至四成熱(約88℃)時,將魚柳掛滿蛋糊後放入油鍋中,輕輕翻動,待魚柳外層結軟衣時,夾入漏鍋中。<br />
4.全部炸好後,再放入四成熟(約88℃)的油鍋中復炸1分鐘,撈出瀝油裝盤撒上花椒鹽即成。</strong><br />

【小貼士】<strong>花椒略炒,用搟麵杖碾碎後和鹽混合,就是花椒鹽。</strong><br />
