炎炎夏日,自己DIY做罐<strong>油漬辣椒</strong>,拌麵拌沙拉, 夠味又開胃!<br />
辣醒夏天昏昏欲睡的味蕾!<br />
<br />
A· 材料:長青辣椒6條、長紅辣椒6條<br />
<br />
B· 調味料:蒜泥2匙、橄欖油適量、黑胡椒1小匙、鹽1小匙、九層塔葉少許<br />
<br />
C· 作法:<br />
1.將青紅辣椒放在瓦斯爐上燒到表皮焦黑,沖冷水去焦皮。<br />
2.用紙巾將水分擦乾。<br />
3.去除辣椒的頂端蒂頭、切粗絲,與調味料拌勻後,放置冰箱24小時,即可食用。<br />
<br />
TIPS:由於是薄鹽低油的醃漬法,所以只能保存7~10天。如果要延長保存期限,可多加一些橄欖油,直至橄欖油完全醃蓋過容器內的辣椒為止,約能保存20天。不敢吃辣者,不要放紅辣椒即可。<br />

材料:油漬辣椒、蝦仁、花枝、秋葵、鹽、薄荷葉、檸檬半顆<br />
<br />
作法:<br />
1.將蝦仁、花枝、秋葵燙熟、過冰、撈起備用。<br />
2.將油漬辣椒、撕碎的薄荷葉與海鮮、秋葵拌勻,並將檸檬擠汁加入。<br />
3.所有材料拌勻,撒鹽調味即可食用。<br />
