菠蘿咕嚕肉

食材<br />
<strong>豬肉、菠蘿、雞蛋、小番茄、青椒、番茄醬、白醋、鹽、生粉、糖、料酒</strong><br />

做法<br />
<strong>1.豬肉切成小方塊,放進大碗<br />
2.加入1小勺鹽<br />
3.加入1小勺生粉<br />
4.加入1小勺料酒,攪拌均勻,醃15分鐘<br />
5.菠蘿切成小塊,用淡鹽水浸泡10分鐘後撈起<br />
6.小番茄和青椒切成小塊備用<br />
7.醃好的肉裡磕進一個雞蛋<br />
8.加入2大勺生粉(我用的是玉米澱粉)<br />
9.攪拌均勻,讓每塊肉都掛到糊,沒有多餘的蛋液,如果感覺粉漿不夠粘稠,可以再加點生粉,理想的掛糊狀態是:粉漿全部粘在肉上,沒有多餘的蛋液<br />
10.鍋裡倒油,燒至8成熱,逐塊肉放入用中火炸至定型後,轉小火炸熟<br />
11.撈起瀝油<br />
12.肉放涼後,重新燒熱油鍋,倒入肉大火復炸1分鐘,撈起瀝油<br />
13.倒出鍋裡的油,把番茄醬、白醋、白糖倒進鍋裡,加一點點鹽,淋入水澱粉,小火煮開成
