<strong>工具/原料<br />
主要食材:上等黃酒,小河蝦或竹節蝦200克,腐乳汁一勺,蔥白50克,薑末10克,生抽三勺,醋一勺,香油一勺。</strong><br />

步驟/方法<br />
<strong>先將蝦洗淨,用剪刀剪去蝦須,蝦腳,然後用大量淨水沖洗乾淨備用。準備一個帶蓋子的容器,將活蝦放入,倒入黃酒沒過蝦的身體,蓋上蓋子將蝦浸泡 20分鐘。將生抽,醋,麻油,蔥白,薑末調成汁,最後再加入一勺腐乳汁增加香味。醉好的蝦非常鮮嫩,直接從酒中取出,醮取做好的調料食用即可。</strong><br />

注意事項<br />
<strong>1.醉蝦一定要使用非常新鮮的活蝦,而且大小要均勻,口感才最佳。<br />
2.蝦在倒入黃酒之前,一定要用純淨水充分清洗乾淨,剪去所有須腳。<br />
3.選用上等的黃酒才是做醉蝦的唯一佳品,蔥,姜,麻油,生抽,醋等調味料按照比例,不能馬虎</strong>。<br />
