皮蛋烏魚子

<strong>【材料】烏魚子一片、皮蛋兩顆、青蒜一根<br />
【調味料】高粱酒一杯</strong><br />
<br />
【作法】<br />
<strong>一、取一深盤,倒入三分之二杯高粱酒,再將烏魚子去除外膜,浸泡在高粱酒裡,約10分鐘;青蒜洗淨,切成細末狀。<br />
二、鍋裡加水煮滾,鍋底放置鐵架或專用蒸架,皮蛋不剝殼,放進鍋裡蒸10分鐘後取出,放涼後撥去外殼,再切成小塊狀,約一個指節大小。<br />
三、取出烏魚子,用鐵夾夾住,盤子裡倒入剩下的三分之二杯高粱酒,點火,用高粱酒火焰烤熟烏魚子。<br />
四、烤過的烏魚子放涼,同樣切成塊狀,大小需與皮蛋一致。<br />
五、皮蛋塊與烏魚子輕輕拌勻,最上面撒上蒜末即可。</strong><br />
<br />
【附】<br />
<strong>一、火烤烏魚子需小心,裝高粱酒的盤子最好是鐵或陶瓷製品,不能使用塑膠品,以免燒壞。<br />
二、高粱酒點火產生火焰,需特別小心。烤魚子時,需兩面烤勻,烤到表面略變色、香氣出現就行,切忌烤太久。</strong><br />
