澆汁魷魚的做法<br />
<strong>1.泡椒,蒜分別剁成末<br />
2.泡姜剁成末,香蔥切成小蔥花<br />
3.魷魚處理乾淨後,用菜切成螺旋圈狀<br />
4.鍋裡加水,加幾片薑,料酒,燒開後把切好的魷魚放入鍋裡焯水,斷生熟透後撈出瀝乾水份,順著螺旋圈擺成一條魷魚的形狀備用<br />
5.起鍋放入少許植物油,燒熱後,把切好的泡姜,泡椒,蒜末下鍋翻炒,炒出香味後加豆瓣醬,翻炒均勻後倒入適量的水<br />
6.把白糖與醋按1比1的比例兌好倒進鍋裡的調味汁裡,待調味汁燒開後,勾入澱粉汁,攪拌黏稠後調味汁,把調好的汁淋在魷魚,撒上蔥花就完成了</strong><br />

烹飪技巧<br />
<strong>1、如何識別優質魷魚:優質魷魚體形完整堅實,呈粉紅色,有光澤,體表面略現白霜,肉肥厚,半透明,背部不紅;劣質魷魚體形瘦小殘缺,顏色赤黃略帶黑,無光澤,表面白霜過厚,背部呈黑紅色或黴紅色;<br />
2、脾胃虛寒、高血脂、高膽固醇血症、動脈硬化等心血管病及肝病患者、濕疹、蕁痲疹等疾病患者忌食;<br />
3、魷魚中含有導致痛風的物質,所以注意不要過多食用,痛風患者更應少食。</strong><br />
