茄子肉絲麵

<strong>主料:茄子2個,豬肉400克,面條(生)500克<br />
輔料:尖椒1個,紅尖椒2個<br />
調料:食鹽2茶匙,醬油1湯匙,蔥10克,姜10克,蒜10克,花椒20粒,料酒1/2湯匙,香油1茶匙,生粉1/2湯匙,小蔥3根,香菜1顆,植物油3湯匙</strong><br />

茄子肉絲麵的做法<br />
<strong>1.茄子切絲,蔥姜蒜切末,豬肉切絲用1茶匙鹽、料酒、生粉、1/2湯匙醬油、少許植物油醃製一下<br />
2.小蔥和青紅尖椒都切段<br />
3.鍋內放1.5湯匙植物油,油熱後放入花椒爆香,撈出,再把一半蔥姜蒜放入爆香<br />
4.放入肉絲滑炒,肉絲變色後放入1/2湯匙醬油,盛出<br />
5.鍋內放1.5湯匙植物油,放入剩餘蔥姜蒜爆香<br />
6.放入茄絲煸炒,炒至變軟,如果太乾,可以適當的加點清水或高湯<br />
7.放入肉絲和小蔥、青紅椒翻炒,最後放1茶匙鹽調味,關火後放少許香油即可<br />
8.另起一鍋將面條煮熟,撈出,澆上茄子肉絲鹵,放上香菜即可</strong><br />
