食材 <br />
雞蛋 3顆 皮蛋 1顆 鹹蛋 1顆 牛蕃茄 小4顆 青蔥 2枝 青花菜 1棵 糖 1/2茶匙 香油 少許&nbsp;&nbsp;<br />

作法<br />
1 <br />
將青花菜切小朵去除硬皮,洗淨備用, <br />
2 <br />
牛蕃茄(可川燙脫皮,也可不用)切小丁狀(保留一顆蕃茄對切,挖出蕃茄湯汁,先放置小蝶子中,步驟6要用,挖除湯汁後再切丁),皮蛋切小丁,鹹蛋切小丁,蔥切小丁末,雞蛋打散備用~ <br />

燒一鍋水,水滾加入少許鹽和油川燙青花菜, <br />
4 <br />
待青花菜熟透後,撈出瀝乾擺盤備用, <br />
5 <br />
炒鍋加入2大匙油,鍋熱倒入雞蛋汁,快速攪動翻炒成半熟散片狀馬上撈起放置一旁,在鍋中再加1大匙油倒入鹹蛋丁翻炒,起油泡後加入蕃茄丁拌炒,加入糖調味(因為鹹蛋有鹹味了,所以鹽可不加),倒入皮蛋丁與雞蛋片拌一拌,熄火~加入蔥末與滴少許香油,即可起鍋裝入步驟4菜盤內, <br />

最後淋上步驟2剛剛另外挖起來的蕃茄湯汁就完成囉~<br />
