  蔥姜炒蛤蜊不僅味道鮮美,且有很高的營養價值。<br />
<br />
  蔥姜炒蛤蜊的做法<br />
  <strong>1.準備原材料<br />
  2.青蔥分成蔥青和蔥白兩部分,再分別切成段;小米辣去蒂後斜切;大蒜去片切片;老薑洗淨後帶片切絲;干辣椒剪成段<br />
  3.蛤蜊放入清水中浸泡半天以上讓其吐沙,中途換水3-4次,最後一次浸泡加入1茶匙鹽攪勻<br />
  4.拿一把廢棄的牙刷將蛤蜊外殼刷一遍再衝洗乾淨,瀝乾水備用<br />
  5.炒鍋內倒入適量植物油燒至7分熱<br />
  6.倒入花椒爆出香味後撈出花椒粒丟掉<br />
  7.放入蔥白段、薑絲、大蒜和干辣椒炒出香味<br />
  8.放入干辣椒<br />
  9.調料炒香之後倒入瀝乾水分的蛤蜊,大火翻炒均勻<br />
  10.待蛤蜊炒至打開時,倒入花彫酒、白砂糖、醋、鹽和味精炒勻<br />
  11.待湯汁快炒乾時,倒入蔥青段和小米辣快速炒勻即可熄火裝盤</strong><br />

  烹飪技巧<br />
  <strong>1、我每次買的蛤蜊,含沙量都不同,但最好都浸泡超過半天,多換幾次水讓其吐沙,如果沙吐不乾淨,這道菜炒得再好吃都沒法下口;<br />
  2、炒蛤蜊的時候少加一點醋,可以很好的掩蓋掉腥味,但千萬別加多了。</strong><br />
