茄子(中型) 4條 肉末 100g 九層塔 1把 清水 100cc <br />
調味料<br />
牛頭牌紅蔥肉燥 15g 鹽 適量 烏醋 15cc <br />
芶芡水<br />
清水 50cc 太白粉 5g <br />

作法<br />

茄子去蒂斜刀切片; 九層塔去除硬梗及老葉 <br />
2 <br />
取一炒鍋, 加入牛頭牌紅蔥肉燥浮在上層的油及紅蔥肉燥各一匙 <br />

放入肉末開小火煸至由紅轉白... <br />
4 <br />
放入茄子, 清水轉大火煮至滾後轉小火, 蓋上鍋蓋悶至熟軟... <br />

打開鍋蓋, 放入調味料翻炒均勻, 試味道? 依家人的喜好做調整, 倒入芶芡水輕輕拌勻... <br />

起鍋前關火, 放入九層塔利用餘溫拌軟(避免九層塔過熱會變黑) 即完成料理。</strong></strong></strong> <br />
