海苔香酥蝦

<strong>原料:鮮活蝦、海苔(稍稍捏碎)、白芝麻、蔥段、料酒、澱粉、鹽。</strong><br />
<br />
做法:<br />
<strong>1、蝦剪去蝦槍和蝦須,背部劃開,挑出蝦線;<br />
2、處理好的蝦,加入適量料酒、鹽、蔥段醃製10-15分鐘,撈出瀝乾水份;<br />
3、將醃製好的蝦放入澱粉裡均勻的裹上澱粉;<br />
4、油鍋7成熱時轉中火,將撲上澱粉的蝦稍稍拍打,抖掉多餘的澱粉,放入油鍋炸至酥脆;<br />
5、將所有的蝦炸好後瀝乾多餘的油;<br />
6、鍋裡留少許油將海苔白芝麻放入炸脆,最後放入炸好的蝦快速拌勻即可。</strong><br />
<br />
小貼士:<br />
<strong>1、蝦槍和蝦須鋒利無比,有老人和小孩吃時,安全起見最好提前剪去;<br />
2、活蝦很滑不好處理時,可將活蝦放入冰箱冷凍室,冷凍15-20分鐘,再取出小心處理;<br />
3、給蝦撲澱粉的時候不要太多,輕輕拍打可以抖掉多餘的澱粉;<br />
4、炸制蝦的最後,開大火猛炸半分鐘,可以使大蝦更加酥脆好吃;<br />
5、做好的菜餚最好乘熱食用,時間過長以後海苔受熱變軟,就會失去酥脆的口感。</strong><br />
