澆汁香鱈魚

<strong>原料:鱈魚、白洋蔥、沙拉菜、紅甜椒、生薑、黑胡椒碎、生抽、糖、蚝油、白葡萄酒、熟白芝麻、香蔥、沙拉醬。</strong><br />
<br />
做法:<br />
<strong>1、用廚房紙巾輕輕擦淨鱈魚的水分,鱈魚塊2面撒塗抹少許黑胡椒碎醃製10分鐘,沙拉菜、紅甜椒切成絲;<br />
2、鍋裡加少許油,放入白洋蔥、生薑稍做煸炒,放入鱈魚小火2面各煎製2分鐘左右,撈出備用;<br />
3、往鍋裡倒入適量生抽、糖、蚝油、白葡萄酒,燒至濃稠加入香蔥碎、熟白芝麻即成澆汁;<br />
4、將燒好的醬汁澆在鱈魚塊上,沙拉菜加沙拉醬拌勻即可。</strong><br />
<br />
小貼士:<br />
<strong>1、儘量挑選新鮮的鱈魚,如果是冰凍的鱈魚,請使其自然解凍,切勿放入水中、微波爐中解凍;<br />
2、用紙巾擦乾鱈魚上的水分,下墊洋蔥、生薑,小火一面煎好才翻面,魚就不會粘鍋了;<br />
3、紅色洋蔥味道過於辛辣,請選用白色洋蔥;<br />
4、澆汁的口味可以根據個人口味自行調節,濃度、鹹味要適中;<br />
5、沙拉菜切之前放入冰水浸泡20分鐘左右,沙拉菜會更加清脆好吃,但水份一定要瀝乾。</strong><br />
