材料:水晶魚1隻、山芹菜3g、胡蘿蔔5g、生香菇1g、酥脆粉(麵粉+太白粉)3g、低筋麵粉與鹽皆少許<br />
<br />
作法:<br />
<br />
1.將山芹菜、胡蘿蔔、生香菇切成長條狀,大約水晶魚的長度。<br />
<br />
2.撒上少許低筋麵粉在胡蘿蔔等蔬菜表面,裹上酥脆粉。<br />
<br />
3.再將水晶魚拌入脆酥粉油炸。須與蔬菜分開裹粉處理。<br />
<br />
4.放入油鍋以170度炸約3分鐘,至金黃色。起鍋前可轉大火逼出多餘油脂。</strong></strong></strong><br />
