意瓜土豆夾心焗三文魚餅

材料:三文魚柳675g,土豆(Yukon Gold)4個,大蒜頭8瓣,酸奶油(sour cream)125ml,檸檬汁15ml,新鮮百里香(fresh thyme)10ml (2小勺),意瓜(zucchini)1根,鹽,胡椒,橄欖油<br />
裝飾材料:蔓越莓干(Dried Cranberries)30ml(2大勺),意大利歐芹(Italian Parsley)30ml(2大勺)</strong><br />

做法<br />
<strong>1)烤箱預熱180C(350F),三文魚以垂直紋路的方向切細條,意瓜切薄片,蔓越莓干和歐芹切碎,大蒜壓成蒜蓉;<br />
2)土豆洗淨去皮切塊後加水和少許鹽煮約15分鐘至軟,濾去水分;<br />
3)把煮軟的土豆放入一容器,加蒜蓉壓成土豆泥。然後拌入酸奶油和歐芹碎,加鹽和胡椒調味後待用;<br />
4)把三文魚,檸檬汁和百里香混合均勻,加鹽和胡椒粉調味;<br />
5)在烤盤裡墊上一層不粘的鋁膜紙,先鋪一層土豆泥,再鋪一層三文魚柳,再放一層意瓜片並撒一些鹽和胡椒。每層厚度大致相同。接著按照土豆泥/三文魚柳/意瓜片順序再鋪三層,在意瓜上刷一層橄欖油後入烤箱烤25分鐘;<br />
6)用刀切成塊,吃時上面用蔓越莓干和意大利歐芹碎點綴,並在週圍撒幾滴橄欖油。</strong><br />
