鱸魚1條、西芹少許、紅椒末1茶匙、酸豆1大匙 <br />

輔料: <br />

1、白葡萄酒1大匙、鹽1/2茶匙、胡椒粉少許 <br />

2、白葡萄酒1杯、鹽1/2茶匙 <br />
<br />
3、奶油2大匙、面粉2大匙、鮮牛奶1/2杯 <br />

做法: <br />
<br />
1、先取下鱸魚魚身兩片魚肉,拌入調味料(1)醃10分鍾,再用平底鍋以少許油略煎兩面,並倒入調味料(2)小火燒入味。 <br />
<br />
2、將調味料(3)炒成面糊,再將魚盛入盤內,剩余的湯汁與面糊炒勻盛出,然後淋在魚身上。 <br />

3、撒上切碎的西芹末、紅椒末及酸豆即成。 <br />

Tips: <br />
<br />
1、剔除魚肉的鱸魚骨可以用來熬高湯,加點姜絲、豆腐就成一道鮮甜的湯,如果丟棄十分可惜。 <br />
<br />
2、煮魚的時間不要太久,大約5分鍾即可,以保持魚肉的鮮嫩。 <br />
