清炒萵筍絲

<strong>主料:萵筍1根<br />
輔料:紅尖椒1個<br />
調料:食鹽1/4小勺,雞精1/4小勺,植物油適量</strong><br />

清炒萵筍絲的做法<br />
<strong>1.將萵筍根部,用小刀反方向切割,把外表的粗皮割掉<br />
2.再將尾部細嫩的皮削乾淨,只留下內部青綠色的莖<br />
3.先斜切成大薄片,再切細絲;炒鍋裡燒熱油,加入萵筍絲、鹽、雞精,用大火快速翻炒;直至萵筍絲變軟即可盛盤,最後用紅尖椒裝飾一下</strong><br />

烹飪技巧<br />
<strong>1、萵筍的粗細和火柴棍差不多即可,切得太細口感不那麼爽脆了;<br />
2、萵筍的表皮很厚,割的時侯要反方向割,很容易割到手,最好扶持的手戴上保護手套;<br />
3、炒的時侯油可以多放點,這樣吃起來比較順滑。鹽要少放,這才能吃到食材的自然清甜味;<br />
4、炒的時間不易太久,大火快炒,炒至軟身就可出鍋了;<br />
5、萵筍中的某種物質對視神經有刺激作用,古書記載萵苣多食使人目糊,停食數天,則能自行恢復, 故視力弱者不宜多食,有眼疾特別是夜盲症的人也應少食。</strong><br />
