材料<br />
<strong>主料:牛肉2斤<br />
輔料:蔥3段、姜4片、蒜2瓣、花椒30粒、八角2個、小茴香40粒、桂皮1小段、香葉2片、丁香5粒、白蔻2個、草寇1個、草果1個、白芷2片、砂仁5個、陳皮1塊、干辣椒2個、十三香1勺、老抽5勺、生抽10勺、冰糖3勺、料酒4勺</strong><br />

做法<br />
<strong>1、牛肉洗淨切塊,放入冷水中大火燒開,煮至血沫浮出。<br />
2、撈出牛肉瀝乾血水,冷卻。<br />
3、鍋中放沒過牛肉的水燒開,放入牛肉和所有輔料大火煮30分鐘,轉小火燉2小時左右。<br />
4、撈出牛肉,瀝水冷卻後切片。</strong><br />
<br />
小訣竅<br />
<strong>1、隨時看好水量,中途可以適當加水。<br />
2、一定不要加鹽,否則會導致肉質變硬。</strong><br />
