<strong>主材:羊排、紅酒。<br />
配料:胡蘿蔔、芋頭、芹菜、生薑、大蒜。<br />
調味料:鹽、生抽、黑胡椒。</strong><br />
<br />
做法:<br />
<strong>1、所有材料如圖。<br />
2、羊排洗淨後冷水入鍋,加數片薑焯水。<br />
3、水開後加少量料酒和數滴醋繼續煮2分鐘,撇去浮沫,將羊排撈出。<br />
4、熱鍋冷油,放入羊排翻炒,炒乾水汽後加入生薑、大蒜和黑胡椒繼續翻炒出香味,加入約150毫升紅酒,繼續翻炒約2分鐘。<br />
5、加入少量生抽炒勻上色,加開水至沒過羊排,加入適量鹽。<br />
6、移入高壓鍋中,大火煮開上汽後轉小火壓15分鐘關火,自然排氣後放入胡蘿蔔和芋頭塊,繼續壓約5分鐘,打開加入芹菜段,煮至芹菜稍變軟即可。</strong><br />

貼士:<br />
<strong>1、葡萄酒選用干紅上色效果比較好。<br />
2、配料裡的芋頭換成山藥更好。<br />
3、加入葡萄酒後一定要翻炒一會,讓酒的澀味揮發一些。</strong><br />
