豬肥腸2條蔥2根薑3公克<br />
<br />
調味料<br />
A.麥芽糖2大匙白醋4大匙水50㏄<br />
B.椒鹽粉1大匙<br />
<br />
作法<br />
1.將調味料A的麥芽、白醋與水放入鍋中以小火煮至溶解混和均勻備用。 <br />
2.蔥與薑洗淨拍破,豬肥腸洗淨後一起放入鍋中,加入清水3000㏄,小火煮約2小時至筷子可輕易穿透後撈出豬肥腸備用。 <br />
3.趁熱將肥腸放入作法1麥芽醋水中均勻沾過,再用筷子或鉤子吊起肥腸晾約6小時至表面乾燥。 <br />
4.熱鍋倒入約500㏄油燒熱至約160℃,放入作法3以中火油炸至表皮酥脆金黃後撈出瀝乾油分切片,食用時沾上椒鹽粉即可。</strong></strong></strong></strong>
