<strong><strong><strong><strong>材料<br />
雞腿230克辣椒4根蒜末1茶匙<br />

調味料<br />
A.醬油1大匙雞蛋1顆太白粉1大匙<br />
B.醬油1又1/2大匙蕃茄醬1大匙白醋1茶匙細糖1又1/2茶匙料酒1茶匙水1大匙太白粉1/2茶匙<br />

作法<br />
1.雞腿肉切小塊,加入調味料A的醬油、雞蛋抓勻後再加入太白粉拌勻備用。 <br />
2.辣椒對剖後切半;調味料B及蒜末調勻成兌汁備用。 <br />
3.熱鍋,倒入約500㏄油燒熱至約160℃,將作法1的雞腿肉塊加入鍋中以大火炸約2分鐘,至表面乾焦後撈起瀝乾油備用。 <br />
4.另熱鍋,加入約2大匙油加入作法2的辣椒片轉小火待辣椒片煎至略焦後加入作法3的雞腿肉以大火快炒5秒後邊炒邊將兌汁淋入炒勻即可。</strong></strong></strong></strong>
