香菇炒豬肝

所需材料:<br />
<strong>香菇、新鮮豬肝、黑木耳、蔥花、薑末、太白粉</strong><br />

調味料:<br />
<strong>料酒、雞湯、鹽、味精、醬油、紅糖、五香粉</strong><br />
<br />
做法:<br />
<strong>1、先將香菇、黑木耳分別洗淨,溫水中泡發。脹發後,撈出,浸泡水勿棄,待用。再把香菇洗淨後切成片狀,黑木耳撕成花瓣狀,洗淨,待用。<br />
2、將豬肝洗淨,除去筋膜,切成片,放入碗中,加蔥花、薑末、料酒、太白粉,攪拌均勻,待用。然後把炒鍋放在火上,加入植物油燒至六成熟,投入蔥花、薑末進行翻炒,出香後即投入豬肝片。<br />
3、再以急火翻炒,加入香菇片及木耳,繼續翻炒片刻;加入適量的雞湯或鮮湯,及香菇、木耳浸泡液的濾汁。再加入鹽、味精、醬油、紅糖、五香粉等配料,以小火煮沸,用太白粉勾芡,淋入麻油即成。</strong><br />
