剁椒魚頭

所需材料:<br />
<strong>魚頭、剁椒。</strong><br />

做法:<br />
<strong>1、先將魚頭洗乾淨,剖開魚頭,放上料酒,薑片醃製一會。剁椒一瓶,用的時候只要一半就可以了。<br />
2、在魚頭上放一層剁辣椒,因剁辣椒較鹹,所以切忌放多鹽,鍋中水開了後,看到蒸汽上來再放魚頭,放入鍋中蒸二十分鐘。<br />
3、魚頭蒸好後,一般水氣比較多,可以倒掉一部分。<br />
4、最後撒上蔥花,鍋中燒熱油,淋在魚頭上即可。</strong><br />

湖南的剁椒魚頭是比較出名的,據說有個來歷,說清朝時期,黃宗憲途經湖南一個小鄉村,借住農戶家,農戶的兒子從池塘捕回一條河魚,女主人就在魚肉裡面放鹽煮湯,再將辣椒剁碎後與魚頭同蒸
