<strong><strong><strong><strong>李璐說:煎餅看似困難,其實簡單得不得了。茄子切丁後拌入麵糊,煎得酥脆焦香就能起鍋,茄子含水量高,既維持口感、又有營養,小朋友更是一口接一口。小朋友不愛吃的蔬菜,只要變成煎餅,他們統統吃下去。<br />

材料(2-3人份):麵粉50g(加水比例1:3)、茄子1/3段、去殼蝦仁半碗(可換魚肉)、蔥葉(上色用,量不拘)、半小匙鹽。<br />

作法:<br />

1.茄子切段、切半後,再切丁。<br />
<br />
2.將茄子、蝦仁與蔥葉,拌入麵糊後加少許鹽。若攪不動麵糊,再加點水調和。<br />

3.熱油後,舀起麵糊鋪平乾煎,至金黃後翻面再煎,即可起鍋。</strong></strong></strong></strong><br />
