李璐說:可以將茄子下鍋油炸,沾著咖哩醬吃;也可以炸過後直接拌炒咖哩。油炸的目的在保留茄子鮮甜與色相。<br />

材料(2-3人份):茄子約2/3段,半隻去骨雞腿肉,佛蒙特咖哩塊(12入組,取1塊),水1/2碗,油。<br />

作法:<br />

1.茄子切段、切半後,再切絲(別切斷),較快熟,雞腿肉切塊。<br />
<br />
2.熱油後,先炸雞腿肉,後炸茄子,炸至半透即可。<br />
