簡易版的佛跳牆,充分展現食材融合的鮮甜。<br />
<br />
材料:<strong>魚翅頭1斤、白菜4顆、高湯1公升,芋頭1顆、乾花菇10顆、五花肉300克,蒜頭數粒、醬油、米酒、黑醋、辣椒各適量</strong><br />
<br />
準備工作:<strong>花菇泡發,連水備用。高湯為雞骨以及排骨一起燉煮。白菜、芋頭洗淨切大塊,五花肉切片。</strong> <br />
1. 酥炸 <br />
<strong>起油鍋,油熱後下芋頭,慢慢油炸至表面金黃即可撈起,放涼備用。</strong><br />
2.拌炒 <br />
<strong>起油鍋,爆香辣椒後,下白菜炒至香,放入砂鍋中鋪底,再放上芋頭,再鋪上一層白菜。</strong> <br />
3.調味 <br />
<strong>另起油鍋,將蒜頭爆至焦黃,再下花菇炒香,下五花肉、魚翅頭炒熟,以米酒、醬油和少許黑醋調味。</strong><br />
4.燉煮 <br />
<strong>將做法3炒熟的材料,鋪在做法2的白菜上,接著加入高湯燉煮1~1.5小時即可。</strong><br />
