自製黑糖粉粿

材料<strong>:(黑糖1杯、水3又1/2杯)(蕃薯粉1又1/2杯、日本太白粉1/2杯、水1杯)</strong><br />
調味料<strong>:糖蜜適量、黃豆粉適量</strong><br />

做法:<br />
<strong>1. 煮黑糖:<br />
黑糖入鍋中加少許水(可浸潤糖的量,從3又1/2杯水中取),煮開至糖化香味出(可搖晃、勿拌),從大泡泡到密實的小泡泡,熄火<br />
將剩餘的3又1/2杯水沖入黑糖漿中,開中火煮開即熄火(最好是煮開時即拌好粉水)<br />
2. 拌粉水:蕃薯粉、太白粉和1杯的水一起調勻成粉水<br />
3. 黑糖漿:將煮開的黑糖水熄火立刻沖入粉水中,以手打蛋器快速攪拌成漿<br />
4. 入模:深盤內抹一層薄薄的油,再將黑糖漿倒入,略整型,再於黑糖漿上滴入少許油,再覆上一層保鮮膜(需使保鮮膜均勻沾覆油,以免沾黏),再以手將表面壓平整。<br />
5. 蒸煮:入蒸鍋,以中火蒸煮20分鐘至熟呈透明狀,取出放涼<br />
6. 食用:食用時切塊,淋上少許的糖漿,再撒上黃豆粉(炒熟的,非洗碗用的),此為日式吃法。</strong><br />

P.S.<br />
<strong>1. 蕃薯粉為正統的紅心地瓜粉,可看包裝後面,若寫樹薯澱粉就不可用。<br />
2. 將黑糖量降至3/4杯,吃時淋糖漿即可。<br />
3. 夏天食用時可加入薏仁、綠豆等其它冰品</strong><br />
