玉蘭花肉丸子

所需材料:<br />
<strong>豬肉餡 200克<br />
玉蘭花 2朵<br />
荸薺 100克<br />
雞蛋 1個<br />
薑末 20克</strong><br />
<br />
調味料:<br />
<strong>香油 2湯匙<br />
料酒 1湯匙<br />
醬油 2湯匙<br />
鹽 1/2茶匙<br />
雞精粉 少量<br />
澱粉 1茶匙<br />
油 少許</strong><br />
<br />
做法:<br />
<strong>1、將玉蘭花瓣拆開,洗淨,在清水中加入半茶匙的鹽,將花瓣浸泡片刻,撈起瀝乾待用。<br />
2、將料酒和醬油及鹽放入肉餡中,拌勻醃製10分鐘。<br />
3、將荸薺洗淨、去皮,切成細末,玉蘭花瓣切成細末,姜切成細末。<br />
4、將荸薺末、花瓣末、薑末、雞蛋清、香油、雞精粉放入肉餡中,用勺子朝一個方向攪拌均勻,待感覺肉餡上勁以後即可。<br />
5、在手掌心中抹少許油,用勺子和掌心將肉餡團成比乒乓球略大的肉丸子。<br />
6、將做好的肉丸子放入已開的蒸鍋中,大火蒸8分鐘左右。<br />
7、取出肉丸,將蒸肉丸時滲出的水倒入一個小鍋中,燒開,用適量水將澱粉調勻,倒入鍋中,調成薄芡。<br />
8、將蒸好的肉丸子放在盤中,將調好的芡汁澆在肉丸上,用玉蘭花蕊作裝飾即可。</strong><br />
