所需材料:<br />
<strong>茄子</strong><br />

調味料:<br />
<strong>肉末適量、蒜末、薑末、蔥末少許、牛肉辣醬、鹽、雞精粉、料酒、醬油(生抽)、醋、砂糖適量</strong>。<br />

做法:<br />
<strong>1、茄子切長條,切好後的茄子放鹽水中浸泡十分鐘,你會發現水變黑了,這時茄子的苦味就去除了一些,還可以防止茄子吸油過多。<br />
2、鍋裡放油燒熱,倒入茄子劃油,劃熟後撈出控油。<br />
3、鍋中放油,放入蔥姜蒜乾紅辣椒炒出香味,放肉末牛肉醬煸炒。<br />
4、放鹽、雞精、料酒、醬油(生抽)、醋、砂糖,放入過油的茄子。<br />
5、最後用一點澱粉水勾個薄芡,我不喜歡芡汁太厚的。</strong><br />
