所需材料:<br />
<strong>茄子3個、肉末。</strong><br />

調味料:<br />
<strong>醬油、雞精粉</strong><br />

做法:<br />
<strong>1、茄子洗淨,對半切開,然後在切成切幾刀。<br />
2、茄子放入油鍋裡炸3到4分鐘,炸然後撈起。第二遍炸把鍋中的油燒熱,裡面的水分燒掉,燒到油不冒沫泡為止,然後再次倒入茄子,這時候可以看見油翻滾的很厲害。這步其實很重要,第二遍炸能把茄子裡吸收的油給逼出來,但記得炸的時間不要長,30秒這樣就可以撈出來出來了。<br />
3、鍋中放油,然後放入蒜末,炒香後倒入肉末煸炒1分鐘這樣,倒入醬油,將炸好的茄子倒入,翻炒幾下,讓茄子都能裹上醬油色,稍微加點水,加點鹽,燒開加點雞精粉,撒點蔥花就可以裝盤了。</strong><br />
