食材 <br />
板豆腐 2塊 雞蛋 4顆 蝦米 10g 蔥末 2根 紅辣椒(裝飾) 2根 <br />
調味料<br />
香菇蠔油 1茶匙 醬油膏 1大匙 美極鮮味露 數滴 <br />

作法<br />
1 <br />
板豆腐泡水加鹽放冰箱2小時備用(以便將豆腐內多餘的水份釋出,豆腐煮時就不易碎爛); 蝦米泡水瀝乾切碎; 紅辣椒去籽切末 <br />
2 <br />
取一深碗, 放入雞蛋, 剝成小塊的板豆腐, 調味料... <br />
3 <br />
輕輕將蛋液調味料攪散均勻包覆豆腐... <br />
4 <br />
取一平底鍋, 倒入兩大匙油, 放入蔥末,蝦米轉中小火爆香... <br />
5 <br />
待聞到香氣...倒入作法3, 轉中大火並將擠到鍋邊的爆香材料往中心推移, 接著如圖用推移的方式將蛋液煎至不流動, 分成小區塊各別翻面, 煎至外層鬆乾... <br />
6 <br />
試味道? 依家人習慣的口味做調整... <br />

盛盤撒上花生米, 紅辣椒(增色用可省略)即完成料理<br />
