【材料】<br />
<strong>干貝    3顆<br />
澎湖絲瓜  1條<br />
辣椒片   少許</strong> <br />
<br />
【調味料】<br />
<strong>鹽     1/2匙<br />
味素    1/2小匙<br />
太白粉水  1匙</strong><br />
<br />
【做法】<br />
<strong>1.先將干貝以開水泡至軟,放入蒸鍋蒸約一小時至軟透後取出放涼,再用手輕拔成絲狀備用。<br />
2.熱一炒鍋,倒入約3大匙油燒至熱,將澎湖絲瓜去皮切片及作法1的干貝絲一起放入拌炒至勻。<br />
3.作法2起鍋前加入太白粉水勾薄欠拌勻盛盤。<br />
4.於作法3干貝絲瓜撒上少許辣椒片即可。</strong><br />

【備註】<br />
<strong>絲瓜買回家如何保鮮呢?老手說可先切去蒂頭延緩老化,用報紙包裹避免水分流失再放入冰箱冷藏。此外絲瓜料理的時間如果太長,顏色容易變黑,所以可以在烹飪前先用滾水汆燙約3秒撈起沖冷水,如此一來就能保持翠綠色了!</strong><br />
